Description of tea selection teas – use, preparation and curiosities:

Xue long chinese white tea – 60g:

It is a rare representative of white teas from Fujian Province in China. Also known as Snow Dragon, the tea praises another generation of white teas. Surprisingly, it differs from most white teas in that it doesn’t taste as “neutral” as it is more fruity – in fact, slightly sweet. It ignores astringent flavors and is gentle on tea consumers in the aromas of its delicate buds. With a slightly prolonged soaking time, you might want to try water cooled back to 75 – 80 ° C (if you want to make really good tea from it).

Da Hong Pao chinese red oolong tea – 60g:

Da Hong Pao is a well-known Chinese unique tea to which not only healing legends are attached but also very popular and known for taste and aroma. Traditional 100% natural Chinese tea from Fujian (Wuyi Mountains) is not necessarily taken every year and is therefore one of the most sought after and sometimes temporarily unavailable teas. They are also classified as red and oolong teas, but in rare cases they are also among the described pu – erh teas (presumably due to the fact that there are also lightly fermented ones among them). We say and keep it oolong despite not being a typically wulong-like twisted tea. There is no doubt about its quality – therefore it is a pity to go into it, it is also reflected in its price. Its preparation is similar to Pu-erh teas – although soaking times are a bit shorter here. The color of its decoction is more like that of red (also known as black) teas, and it reflects that of darker oolongs.

Preparation proposal:
Pour 5 to 7 g of tea with 1-2 dl of water at 90 to 95 ° C (this is about as much as you can loosely hold with four fingers in one hand at a time) and let the first decoction soak for a short time, for example only 20 to 25 seconds. By implication, the other decoctions are soaked a little longer and we can expect that approximately 5 decoctions can be made to a particularly enjoyable quality.

Black Gunpowder black tea – “Black pearl” 80g:

This rare Chinese tea, which originates in Fujian Province in China, is called black gunpowder because it is reminiscent of the 19th century. gunpowder used by British royal warships in the 16th century. This is practically a black tea i.e. red tea (to be exact). In his homeland of China, it is called the “Black Pearl” and, according to tradition, black spheres with a shiny surface are twisted by hand. Its decoction is moderately dark and mild. It is popular for its full-bodied taste and smoky aroma – especially recommended for breakfast or an invigorating tea after lunch.

Category: Black tea / red tea – Hong cha
Origin: Fujian, China
Taste: Slight, slightly smoky
Preparation suggestion: Use almost boiling water and soak for a maximum of 2 minutes. According to a practical proposal; once the water has boiled, prepare the tea and the tea utensils for it. This takes about exactly the amount of time during which the water cools back to an ideal level for Black Gunpowder. (If someone wants to make it coarse, use water above 90 ° C and soak for 3 minutes – but we think it kills the real tea experience.)

The Kitsimono workshop suggests:

Use water at 70 to 80 ° C and soak the tea for a minute. In this way, the taste remains completely full-bodied and the slightly smoky character is retained.

The gift tea: Genmaicha – Japanese green tea with roasted rice grains “popcorn tea” – 80g:

Traditional Japanese green tea is Genmaicha. It is known by many names but of these, in addition to Genmai cha, popcorn tea is the most common. It has an interesting past because it was originally made from cheaper bancha teas (which is also green tea) with the addition of toasted brown rice – which practically diluted the tea to make it cheaper. Hence the well-known Japanese stanza, “Genmaicha is the tea of the poor”. Since then, Genmaicha has run a great career because it has become popular in Japan due to its interesting taste and high enjoyment value. This is how a world tea career started from Kyoto. Today, most of them are made with an organic process, as is the 80g package we offer. While consumed in Korea as a medicinal drink by all walks of life, it has ringed into the collections of Japanese tea lovers in Europe as a luxury item. He soon got the name popcorn tea in the world outside of Japan, which can only be explained by the fact that while roasting brown rice, some grains popped out one by one and it was also added to the tea. (Some people eat these rice grains after cooking several times – but don’t tell anyone!) Because this tea required mochi rice used for mochi flour, the professional ability to make it remained virtually in Asia, especially in Japan. Such is a tea that was invented for the poor and then became the privilege of the rich.

Its taste is strongly determined by toasted rice. The taste is similar to that of dietary bread supplements made from puffed rice (which girls mostly eat for snack for fear of their shape). In addition to such health-preserving sandwiches and nutritional supplements, Genmaicha green tea, which offers excellent taste, is not only trendy but also healthy – being that organic green tea is practically.

Did you know?

Although Genmaicha tea was most often made from bancha tea, it was also rarely made using sencha tea or gyokuro tea. Today, organic banchas are more typical ingredients, which we also know to have a low caffeine (tein) content – which is why they are a pleasant drink even after a meal.

Preparation:

Like most green teas, it is poured with water cooled back to ~ 80 ° C, soaked for a maximum of 2-3 minutes (so as not to be bitter) and then consumed after filtration. We usually soak for 1-2 minutes instead, we think the result is better, but of course it’s a matter of taste
